1. Arkansas seems to not understand the concept of seasons. Going from 50 degrees and rainy to 90, humid, and sunny completely misses the purpose of spring. I felt like a dead man kinda-running yesterday slogging through the humidity. I ran an average pace of 10:52 min/miles over 5 miles. That would be roughly the same pace I was running last July when I first started running. As in, I had 0 experience and had no idea how to pace myself. No bueno.
(Breakfast: quinoa, oat bran, egg white, 1/2 apple, cinnamon, and 1 tbsp PB)
2. You know how yogurt containers have those pesky expiration dates that you have to search all over for? Yes, well I found mine after I ate my greek yogurt snack last night and it was a week past its due date. The old me would have scoffed and been all ‘heeeelll no,’ but the new, poorer Jenn simply shrugged it off as an inconvenience. Waste not when you can afford not nothing. Tummy aches be damned.
(Dinner: Mixed beans, sweet potato smothered in butter and nutritional yeast, and broccoli. Oh and I took my own bottle of ketchup to work…yes I did go there.)
3. As I lay in bed last night contemplating life as I so often do these days it dawned on me that the reason I could not sleep was because I am not currently reading a book. I’m one of ‘those people’ that reads approximately 2 pages and promptly passes out. Something about all those words just makes me so sleepy…I need book suggestions.
(Lunch: Mixed greens, spinach, onion, tuna, corn, relish, avocado, hummus, and balsamic vinaigrette.)
4. This block of tofu has been ‘pressing’ in the fridge for roughly a week. I’m not really sure how it went unnoticed considering it was sitting in the very front of the fridge eying me every time I went for a little nosh.
Today it meets its maker. Get in my belly.

That quinoa recipe looks like something I used to eat when I wrestled in college! Reminds me about how far off the beaten path I have come! That block of tofu looks yummy to. I press them and then top them with herbs and spices and olive oil and it comes out like cheese! Good read! Nice blog!
