Can’t Sleep, Will Bake

I remember the days of “sleeping the day away” oh so fondly. I would roll out of bed at noon and the day would pass by in the blink of an eye. Not so anymore. It seems to be that no matter what time I go to bed I wake up ready to go at 7AM. This makes for very productive mornings when there is a tough workout on the training schedule or a to-do list to accomplish before work, but on a relaxing “rest day” Saturday, it means I am twiddling my thumbs waiting for the rest of the world to wake up.

So what does one do to pass the time? Bake, of course! I had 3 disastrously ripe bananas hanging out on my kitchen counter just begging to be turned into a decadent yet healthy treat. I got out my handy-dandy recipe finder (my computer) and quickly set to work scouring my favorite blogs for the perfect recipe. Quickly enough I found the winner.

This new momma makes a mean banana bread! Congratulations Emily! Cullen is absolutely beautiful.

I think baking is therapeutic. Kind of like cleaning except you actually get something out of it. I love how 20 minutes in the entire apartments starts to smell of cinnamon. It fits the fall theme I am trying to elicit in my first apartment. Would you like a sneak peak of my decorating skills? It’s really intense so prepare yourselves.

Back to the baking. I seem to have a bit of a short of attention span this AM. So I spent 15 minutes on my dining room floor trying to photograph the scrumptiousness that is this bread but it’s just not my day (or it may be my 4 year old camera…there is no telling really.)

Regardless, this stuff is good. So good in fact I am about to pawn most of the loaf off on a special friend so that I don’t eat the whole thing. Sharing is caring!
