It’s not easy to always focus on what to eat when there are so many convenient options out there. And Sunday night the last thing I wanted to do was prep food since the roomie was watching all kinds of scary movies that seemed infinitely more entertaining than working away in the kitchen.
I managed to whip up a weeks worth of snack salads before calling it quits. Good thing I have a love of frozen veggies and soup because that is the theme of my week.
Other things on the food front…
I order the latest and greatest book by my idol Marion Nestle along with my monthly Nutrition Action Healthletter. A little light reading never hurt anyone. I’m excited to delve into this book despite its length.
Josh and I are taking a little trip to the big city this weekend (NYC!!) so I figured I ought to purchase some entertainment for the train. I am so excited about this trip, as we have been planning it for a while, and I can’t believe it is actually here! We have many fun things planned including a special dinner at Candle 79 that I have been looking forward to for months.
This week is nothing more than a countdown until we get there!
In other news, I made a new recipe last night!
Vegan Black Bean Burgers inspired by Andie’s blog, Can You Stay for Dinner. These came together in 20 minutes flat and were absolutely delicious! I want to make some and keep them in the freezer eventually. I only made enough for 2 meals last night as you gotta test these things out first, ya know?
Lunch today was the perfect lazy girl meal and featured leftovers from last night. I am starting to realize that all of my meals look exactly alike. Perhaps I should stop taking pictures of them…hmm. (ponder.ponder.ponder)
(Frozen veggies (broccoli and green beans) leftover black bean burger, all smothered in nutritional yeast with a side of toast.)
And on a completely unrelated note I actually rolled out of bed early this morning and squeezed in 45 minutes of yoga before work so I am laying low tonight. I’m thinking a mani/pedi and a nice long bubble bath are in order.
