What the eff are you eating? “Kale”

In week 2 I felt it would be appropriate to share my favorite food to eat with nutritional yeast. As a winter vegetable kale is everywhere these days! I can’t seem to keep it out of my grocery cart and consume an average of about 2 bunches a week. So let’s learn all about it, shall we?

What is it?

Kale is a member of the Brassica family that includes cruciferous vegetables such as cabbage, broccoli, and Brussels sprouts. (I love broccoli!) The species is extremely nutrient dense and is notably rich in beta-carotene, vitamin C, and calcium. The main difference between kale and it’s family members is that the vegetable does not form a head, but rather grows on long stems and sprouts like leaves.

Why is it good for me?

We all know that we are supposed to eat our vegetables because they are good for us but there are many people out there who just do not like the taste and/or texture of the food group. To them I say if you are going to neglect all other vegetables at least eat some kale! In addition to being low in calories and high in fiber, this veggie leaves all others in it’s dust when comparing nutritional profiles.

What does Kale taste like?

Kale is one of those miracle veggies that takes on the flavor you prepare it with. In its raw form, the veggie has a mild, earthy texture and flavor that may be easily masked by the simplest of spices. The most notable characteristic of kale is it’s chewy texture. But it is said chewiness that makes it so easy to cook with! From kale chips (click to view the recipe I use) and smoothies (you can’t even taste it!) to a simple saute, there really is no excuse for not eating your greens.

What kind should I buy?

There are several different varieties of kale that grace specialty supermarket shelves but the most recognizable type is curly kale which has wavy leaves attached to a sturdy stem. The leaves of kale can range in color from bright green to purple and sometimes even red. Don’t be put off by the different varieties as they can all be used interchangeably.

    I loooove kale chips – just spray some olive oil from a mister over the kale and bake ‘em. Then I just sprinkle a little Lawry’s seasoning — not the healthiest seasoning but I just sprinkle a bit, plus it makes me feel like I’m eating French fries :)
