1. Chef Bob’s scrambled eggs.

Over 1/2 hollowed out everything bagel, those fluffy eggs were the thing of dreams. My sleepless Saturday night was left behind as I inhaled breakfast.
2. A productive Sunday evening. I killed it at the gym, got fro-yo with my guy, prepped a bunch of food for the week, and managed not to succumb to my laziness until nightfall.

3. Terra, written by my blogging buddy Gretchen, made my commute to and from work almost pleasurable. That’s how you know it’s good. I’ve been meaning to read this for months and once I heard it was available in iBooks it was mine!

All I can say is well done, Gretchen, well done!
4. Homemade Bean Soup Recipe: Easy, clean, and delicious for quick lunches and dinners on the go!

What you’ll need:
1 cup raw beans or 3 cans of the beans of your choosing (I used Trader Joe’s 17 bean mix)
1 can peeled tomatoes
6 large carrots
1/3 onion
1 large potato
1 bag baby spinach
enough water to cover the beans
spices of your choosing (I used salt, pepper, red pepper flakes, basil, and a random all spice I had in the pantry)

What to do:
Simmer beans for 45 minutes or until tender
Chop tomatoes and add entire can (juice and tomato) into the pot
chop onion, potato, and carrots and add to pot
Bring to a boil, then add the spinach and spices
Simmer for 3 to 4 hours until everything is tender
Enjoy!

We do all of our food prep over the weekend, though, because it saves SO MUCH TIME during the week.
