Spin and Salad

On Sunday, after a fabulous brunch with Gretchen, I headed to Trader Joe’s to stock up on healthy eats for the week. I mean, don’t be fooled because I definitely had brunch dessert, but it’s all about balance, right?

I got all the fixins’ for plenty of salads. Apparently I took a before picture but not an after so imagine all the goodies below in four tupperware containers.

I mixed the three bags of lettuce (spinach, romaine, and a mix), 1/2 cup serving of lentils, onion, red pepper, and tomatoes. Prepping makes all the difference. Now my healthy food is convenience food!

Since I was already messing up the kitchen I decided to roast a bunch of things too.

I now have plenty of sweet potatoes for the week but managed to eat the entire bag of broccoli already. :)

Monday was full of ups and downs. The metro was a full on fiasco in the AM which started the week off on a not so great foot. I kind of lost it after 30 minutes of waiting for a train. Once I settled my nerves and made it to work I spent the day looking forward to my evening plans.

I met up with my new blogger BFF’s for a spin class at Revolve DC!

I went in with no expectations as I have taken enough spin class to know it’s either a total hit or miss. By the end of the first song I knew this was my kind of place: loud music, dark room, and lots of motivated people. Our teaching was totally into the class, which makes all the difference in the world.

I burned plenty of calories and had a blast doing so! If you’re local I highly recommend checking out Revolve. Afterward, we took our sweaty selves to Chop’t to refuel the right way.

Salads on salads.

Not a bad way to start a Monday night. I can’t wait to start trying more fitness classes around DC. I am not sure why I haven’t started sooner but it was seriously a blast!

    gosh I love roasting vegetables, they make them taste so good. Sounds like an awesome spin class!

    I totally lucked out on the metro Monday morning. I get on at Pentagon and while there were hundreds of people on the platform, my train pulled up RIGHT as I showed up and I even managed to snag a seat. Not sure how I pulled that off.

    I love salads. Lately when I go to SweetGreens, I’ve been getting spinach/arugula, grapes, cherry tomatoes, black beans or garbanzo beans, avocado and the spicy quinoa. Sometimes I get goat cheese or feta depending on my mood, but lately I’ve been going sans-cheese for no particular reason. With balsamic vinegar and light olive oil.

    I LOVE roasted vegetables, especially sweet potatoes and brussel sprouts
