It seems like everything in D.C. is winding down except my commute. On that end, there are more cars than ever. I think someone is testing my patience and is making sure I really value and appreciate what a blessing it will be to work from home.
Hours spent in the car have given me a lot of time to reflect. I feel so ready for this next step, which is a welcome change from the uncertainty that once filled my mind. Sleep is getting more and more difficult to come by in anticipation of my big move. By the time my head hits the pillow I find my mind racing with lists of things to do, people to say goodbye to, and loose ends to tie up.
I find the best way to handle the impending chaos is to plan and do as much in advance as possible. I spent most of last weekend and Monday night packing so by the time Chef Bob arrives everything should be ready to go. I’ve also packed a good portion of my kitchen supplies, which meant that I had to make a giant meal to provide leftovers for the remainder of the week. Enter Trader Joe’s Chicken Meatballs.
When I saw one measly package left on the shelf I knew they must be good so I grabbed it as quickly as a Supermarket Sweep contestant.
Since they are pre-cooked, my meal came together rather quickly. I stabbed holes in my spaghetti squash before throwing it in the microwave for 10 minutes. While that did it’s thing, I heated the meatballs in marinara sauce and added in a couple of spices (salt, pepper, red pepper flakes, and garlic).
Once the squash was soft I used a fork to pull the “spaghetti” strands and added it to a pan with some broccoli. Finally, I combined it all in one dish and voila, dinner is served! I am on my third meal of leftovers so I definitely call this one a success!
